- 5 gray shallots
- 1/4 teaspoon caster sugar
- 10 g butter
- Salt pepper
- Peel the shallots.
- Arrange them whole, with butter, in a saucepan or casserole.
- Make them colored on medium heat by turning them all the time.
- Sprinkle with sugar, let caramelize over low heat.
- Cover with water.
- Continue cooking uncovered until completely evaporated.
